Introduction to a Plant-Based Diet

A plant-based diet focuses on foods that come from plants, including fruits, vegetables, whole grains, legumes, nuts, and seeds. This course introduces the principles, benefits, and practical application of eating primarily plant foods for health, sustainability, and overall well-being.

Participants will learn the nutritional foundations of a plant-based diet, including how to obtain essential nutrients such as protein, iron, calcium, and vitamin B12. The course also explores the health benefits supported by research, such as reduced risk of heart disease, type 2 diabetes, obesity, and certain cancers.

In addition, the course covers meal planning, reading food labels, and transitioning from a meat-centered diet to a plant-based lifestyle realistically and enjoyably. Environmental and ethical considerations, including the impact of food choices on climate change and animal welfare, are also discussed.

By the end of the course, learners will have the knowledge and confidence to make informed, balanced, and sustainable plant-based food choices that support long-term health
